Remagoa

High in the remote mountains of Letefoho, the small community of Remagoa is producing something remarkable. At 1,850masl, this is one of the most isolated places Karst Organics works with. Until recently, selling coffee here meant a daily 2km hike through dense forest, carrying freshly picked cherries to wait by the roadside for passing buyers offering the lowest prices. In 2022, that changed.

By processing parchment at home, farmers now have full control over their coffee. Cherries are selectively picked, floated to remove defects, then pulped and fermented for 40–44 hours. After thorough washing—up to eight times—the beans dry on raised beds for 7–10 days before resting for six weeks. Once ready, they are transported to Dili for final grading and sorting.

This fully washed coffee is crisp, clean, and vibrant, with a clarity that reflects the precision behind every step of its processing. A high-altitude lot that highlights both the quality of the region and the dedication of the farmers who produce it.
