This Red Bourbon honey comes from Finca San José Ocaña in San Juan Sacatepéquez, grown at around 1950–2000 masl under Inga shade trees. The farm’s high elevation and clay-rich soils slow cherry development, resulting in denser beans and lower yields.

Cherries are processed on site at the farm’s own wet mill, allowing the Sanchez family to maintain control from harvest through to drying. For this lot, the coffee is pulped and dried with a portion of mucilage intact, following a honey process that balances sweetness with structure. Drying is carefully managed to avoid over-fermentation, keeping the profile clean while allowing the natural sugars of Red Bourbon to come through.

Although San José Ocaña works with more than 50 varieties across the farm, this lot has been kept separate as a single-variety Red Bourbon, reflecting the estate’s focus on segmentation and traceability rather than blending.
