


Nuevo Vergel | Maragogype Natural
This natural Red Maragogype Criollo comes from Nuevo Vergel, a small community in La Concordia, Chiapas, located at around 1750 masl within the El Triunfo Biosphere Reserve. The Maragogype trees here are part of a traditional Red Maragogype line that was widely planted in Chiapas throughout the last century, before most plantings were replaced or crossed with other varieties.
Today, these trees are increasingly rare. Many Maragogype populations have naturally evolved or been crossed into more resilient varieties such as Maracaturra or Pacamara. In Nuevo Vergel, the Sanchez family continue to farm Maragogype that has not been crossed, preserving the original characteristics of the variety.
Harvest is tightly coordinated. Edelmira’s field technicians monitor cherry ripeness throughout the season, and once the fruit reaches peak maturity at around 23° Brix, the Sanchez family carries out a focused three-day harvest. Each evening, cherries are taken to Beneficio Edelmira, where they are floated, cleaned and sealed in GrainPro bags. The cherries rest anaerobically for 36 hours at around 25°C before drying slowly on raised beds under partial shade. Drying takes around 20 days, with daily checks on temperature and moisture. Once the coffee reaches 11% moisture, it is sealed in GrainPro bags for a 60-day stabilisation period before transport to the dry mill.
