


Manoso Honey Peaberry
This peaberry lot from Mio is honey processed - meaning the cherries were mechanically de-pulped at the farm’s wet mill, but the sticky mucilage layer was deliberately left intact. That mucilage is packed with sugars, which play a key role during drying, encouraging a slow fermentation that adds richness and depth.
After de-pulping, the beans were moved to raised beds and concrete patios, where Mio’s drying systems - including ambient-air rotating machines - help manage moisture levels gradually and evenly. Once dried, the coffee was run through density separators, screened for size, and colour-sorted with optical-electronic systems for a clean, uniform final lot.
