This natural Bourbon and Catuaí lot comes from Finca Amatillo, located in the Santa Rosa region of Guatemala, between the Tecuamburro and Pacaya volcanoes. The farm sits on the slopes of La Gavia mountain at elevations ranging from roughly 1600 to 1800 masl, where cooler temperatures and consistent rainfall support slow cherry development.
Coffee at Amatillo is grown under a diverse shade canopy that includes Gravilea, pine, oak and native Chalun trees. Average temperatures sit around 18°C, with annual rainfall of approximately 2,200 mm. These conditions, combined with altitude and soil type, contribute to steady maturation and balanced natural processing.
Harvesting is closely supervised, with cherries picked only once they reach full ripeness. After harvest, the coffee is carefully depulped and dried in the sun, with drying closely managed to maintain consistency and avoid over-fermentation. This is the first shipment from Amatillo, marking the start of a new offering alongside its neighbouring farms.
