This Catuai anaerobic slow dry comes from Altieri Specialty Coffee, a family-run business based in Boquete, Panama. Founded by Eugene Altieri in 2005, the company is now led by his children, who continue to invest in quality-driven farming and experimental processing. The Rola plot, where this coffee was grown, sits at 1750 masl and is unique within the Mima Estate for its full-day sun exposure - ideal for slow, even cherry development.

Harvested on 6 January 2025, cherries were sorted by density using a mechanical siphon at the Alto Lino processing facility. They then underwent a 72-hour anaerobic fermentation in sealed tanks before being moved to raised beds inside a greenhouse, where they dried slowly over 28 days. Once dried, the coffee was rested in a temperature- and humidity-controlled warehouse before export.
