Ciasu comes from Mió, a family-run farm in Monte Santo de Minas in Minas Gerais. The farm sits across varied elevations and soil types, and each section is managed with a long-term view: restoring soil health, reducing chemical inputs, and creating stable work for local families year-round. The same group of workers return each harvest, many of whom also help with post-harvest drying, sorting and warehousing on site. It’s a place where coffee is grown, processed, and prepared for export all in one continuous system.

This particular lot is a natural peaberry. Peaberries form when only one seed develops inside the cherry, giving the coffee its small, rounded shape. They roast evenly and tend to offer a slightly denser sweetness. At Mió, natural processing is the core of their microlot approach: cherries are dried on raised beds and patios before finishing in mechanical dryers. This layered approach balances fruit-forward character with a clean structure and good solubility.
